De Ripasso is een bijzondere wijn die ontstaat wanneer de “gewone' Valpolicella enkele maanden na de gisting gemengd wordt met de zeer geconcentreerde druiven die gebruikt zijn voor de produktie van de Amarone. Hierbij onstaat een 2e gisting die tot gevolg heeft dat de Valpolicella veel meer kleur, kracht en smaak krijgt. Hierna rijpt de wijn ongeveer 12 maanden in kleine eikenhouten fusten
Deze tenuta is opgericht door 2 broers die ook bezittingen hebben in Custoza en aan het Gardameer.
 

Veneto

Proefnotitie

Dieprode wijn met een kruidig, cederachtig aroma en veel rood fruit. De smaak zet krachtig, pittig in met een fijn zuur en stevige, maar ronde tannine. Ronde, zeer aromatische afdronk.

Drinken bij

Geconcentreerde wijn, prima bij krachtige gerechten zoals kruidige stoofschotels, ossobucco of hazenpeper.

Houdbaarheid

Nu op dronk, houdbaar tot 6 a 8 jaar na oogst datum.
